Three Generations.

First Generation

In 1961, amid political unrest in post-independence Tunisia, Aaron's grandfather, Shilo Benmoussa, journeyed by boat from Tunisia to Paris in search of a new future for his family. He settled in the Belleville neighborhood and opened Délice de Carthage, a pastry shop specializing in traditional oriental pastries inspired by North African and Mediterranean flavors. The bakery became a renowned and beloved local institution for the local community.

Second Generation

Building on that foundation, Aaron's father, Isaac, later opened Chez Isaac, a well-known Parisian restaurant known for its lively atmosphere, warm hospitality, and deeply personal approach to dining, that served the community for more than 20 years. There, Aaron was immersed in the world of professional hospitality. Growing up surrounded by kitchens, desserts, pastries, and the rhythm of restaurant life, he developed an early appreciation for both culinary technique and the emotional experiences that great food can create.

Third Generation

Aaron began working professionally in Parisian pastry at just 13 years old. By 17, he was already working with Mama Shelter Paris, later helping open an additional location in Bordeaux and serving as Head Pastry Chef. After relocating to Los Angeles to expand his culinary horizons, Aaron spent time at The Peninsula Beverly Hills refining his craft within one of the world's most prestigious hotel environments. Rosemary Chocolat was created as the culmination of these experiences, bringing together three generations of culinary heritage, Parisian pastry traditions, and modern Los Angeles luxury. Named in honor of Chef Aaron's two great loves, his daughter Rose and his wife Mary, Rosemary Chocolat is the legacy that follows.

This is craft shaped by hand, passed from generation to generation. I am the third chapter of a French culinary lineage; and these chocolates are inspired by my two greatest loves, my daughter Rose & my wife Mary. Rosemary Chocolat is the legacy that follows.
